About Elizabeth Foley-Ainslie

I received my PhD in Nutrition and Food Science in 2020 from Florida State University, and did my post-doctoral training at St. Jude Children's Research Hospital. I also has a master's degree and bachelor's degree in Exercise Physiology from the University of Miami. I've always been creative and loved to write, so now I write both educational and fictional children's books, and am working on some young adult and adult fiction/health education books. I believe in the power of food to heal the body and want to help both children and adults learn how to use food and exercise to have a healthier life. I also hope that my future books will give children the foundation they need to make healthy choices as they develop, thus combating the childhood and adult obesity epidemic. I'm a teacher at heart so I keep a health education Instagram page (@elliemarie_phd) that I am trying to be more active on now that I'm graduated and have the time! I enjoy creative and scientific writing, cooking, and collecting odd hobbies.
